Cook Once, Eat Twice: Roast Beef (the leftovers)


I'm not sure that there is a way to make BBQ beef look really appetizing, but I tried :) lol

We cooked our Crockpot Roast Beef and had some leftovers. No problem! We'll turn that into another meal in no time.

Here's what I did:

Heat the shredded beef in a saucepan with about 1/8 cup water. Continue to shred up any pieces that are biggish and heat through. Now, dump in 1 (16 oz) bottle of BBQ sauce and stir really well. When it's all heated up, serve your beef on split burger buns or outdoor rolls (we like our toasted) with some onions and maybe a slice of cheese or two.

Pretty easy right? I'm sure this is nothing new to anyone, but I thought if even one of you hadn't thought of doing this it would be worth it to write about. It makes such a simple weeknight meal. In less than 15 minutes you are eating dinner. I like to have coleslaw, potato salad, green salad or chips on the side but what you serve is up to you.

That's my quick tip for you today. How to turn 1 roast beef into 2 meals to feed your family WELL!

The Lowdown:

Roast Beef: $2.50
Buns: $.99
BBQ Sauce: $.50 (got it on a really good sale!)
Coleslaw mix: $.99
mayo, mustard, vinegar, sugar salt and pepper to make coleslaw: $.25

Total: $5.23 or $.87 per person

Not too shabby!!! :)
