Mexican Rice, My Way

Here is the recipe that I use to make Mexican Rice. It's a couple different recipes smooshed together to make one that my family really likes and we use it often. Sometimes, we make this rice and put it on top of some refried beans and eat it with homemade tortilla chips. It makes for a very inexpensive and filling meal.

Mexican Rice, My Way

1 small onion, chopped (about 1 cup)
1 cup long grain rice
1 Tablespoon Oil
1 cup of prepared enchilada sauce
2 1/2 cups water
1 teaspoon taco seasoning
1 medium bell pepper, chopped

You are going to put the oil in a medium skillet, I used my 12" cast iron pan, and add the onion. Saute it around for about 2 minutes and add the rice. Stir that around in the pan for about 5 minutes until the rice is golden brown.

The rice is golden brown.

Next, you add the enchilada sauce, water, seasoning and green pepper.



Stir to combine and bring to a boil. Cover and reduce heat to simmer for about 25-30 minutes.

After 20 minutes, I uncover it and give it a stir. It seems like if you don't do this there are a few grains of rice around the edges that don't get all the way done. Test for doneness at this point, recover and check every 5 or 10 minutes until your preferred doneness is achieved.
