Apple Burritos


Apple Burritos.

Our favorite Mexican restaurant serves something like this, but it is deep fried and very, very large. I searched the internet for recipes for mexican food and saw several recipes for these instead. While I didn't follow one of these recipes, I used them as a starting point for my own version with our preferences in mind.

This is what I used-

Apple Filling:
5 granny smith apples; peeled, cored and chopped
1 cup brown sugar
1 teaspoon cinnamon
1 Tablespoon corn starch mixed with 1/4 cup water
1/2 cup chopped pecans, optional

Sauce-
1 cup packed brown sugar
1 cup white sugar
1 cup water
2/3 cup butter
3 Tablespoons Whiskey, optional

Here is how I did it-

Chop the apples and put them into a large saucepan:



Add brown sugar and cinnamon:



Cook it over medium heat, stirring often until the juices begin to boil. Add the cornstarch dissolved in the 1/4 cup water and continue to cook until thick. Take off of heat.



It should look something like this.

Next, you roll up 1/4 cup of the apple filling into 8" flour tortillas. Lay them into a 9"x13" greased baking dish.



To make the sauce, put the sugars, butter and water into a small saucepan and cook on medium high heat for about 5 minutes. This is also the sauce I use when I make sticky buns. It's also good on ice cream.


Pour half of the sauce onto the burritos,


At this point I also added some chopped pecans. I would highly recommended it, there were about 1/2 cup of them.


Bake for about 30 minutes, then baste with the sugar syrup every 5 minutes until they get nice and crispy. Mine took about 45 minutes, so I basted them 3 times.

While they were cooking I put the other half of the sugar mixture back on the stove and added the whiskey. I boiled in on medium-low for about another 10 minutes until it was thick and had lost the raw alcohol flavor. This is entirely optional, but I wanted a little sauce to put over the ice cream I was going to serve with it. If you choose not to do this step you can half the sauce recipe and not have any leftovers.


There you have it, an apple burrito with caramel ice cream and a whiskey caramel sauce.

These are delicious and very easy to make. As a plus, they can be made the night before and baked the next day.

  2. the place we get them at in GP uses a tortilla and deep fries them, but I was trying to make them a little healthier...I bet it would be good though.
