The other day I saw this recipe on The Pioneer Woman and I knew they would be the perfect Friday breakfast. I mean, who doesn't love muffins? Or donuts? Then to combine them....Heaven.
It's also very simple:
Flour, salt, Baking Powder and cinnamon.
In a separate bowl mix eggs, applesauce, milk and sugar.
Pour it together.
Stir until the flour mixture is just incorporated. Some lumps are ok.
Scoop it into a greased muffin tin.
Bake for 20 minutes.
Dip the tops into melted butter.
Dip into sugar/cinnamon mixture.
All done.
Now, wasn't that simple?

1 3/4 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/3 cup applesauce
3/4 cups sugar
3/4 cups milk
FOR THE TOPPING:
1/4 cups butter, melted
1/3 cups sugar
1 Tablespoon cinnamon
Combine the flour, baking powder, salt and cinnamon.
Combine the applesauce, oil, eggs and milk in a separate bowl. Add dry ingredients and stir only to combine.
Bake at 350 degrees for 15-20 minutes. Meanwhile, melt the butter in a bowl. Combine the sugar and cinnamon in another small bowl.
Shake the muffins out while still hot. Dip muffins in butter, then into the sugar/cinnamon mixture. Let cool.
*This makes about 12 muffins, but I doubled the recipe and got 18 larger ones.
uh-oh, you left the applesauce out of the instruction set. Gma has promised ;) to make some soon. But tomorrow is blackberry cobbler & since you don't like it I get your piece!
ReplyDeleteI fixed it. It was because the origional recipe called for oil, and when I doubled it I used half oil and half applesauce. But when I make a single recipe, I use all applesauce. I don't know why I do it that way....I'm just wierd like that :)
