Toasted Coconut Quick Bread








Who wouldn't want to eat that? It is so good, so delectable, so EASY.
It tastes like a coconut macaroon that you can spread butter on. Or raspberry butter, because that's what I just did.
I made this a few years ago for my grandparents when they were going on a trip and my mom and I made them a little basket of goodies to take along.
I have though about it many times since but didn't know what cookbook I got it out of. Well, today I found it. And I rejoiced.

Now, lets get down to it.

Toasted Coconut Quick Bread
adapted from the Better Homes and Gardens Homemade Bread Cookbook, circa 1973

3 cups all purpose flour
1 cup sugar
4 teaspoons baking powder
1 teaspoon salt
1-14oz bag of shredded coconut, toasted
1 slightly beaten egg
1 1/2 cups milk
2 tablespoons vegetable oil

Pre-heat your oven to 350 degrees. Thoroughly combine the first four ingredients.




This was pre-stir.
Now you add the toasted coconut. Since we just covered that here, I decided not to go through it again. Feel free to go back and have a refresher course if you need it.

After you have the coconut all mixed up you add milk, egg and oil. I also added 1 teaspoon of almond extract. It looked like this:




Now stir to combine. Remember that this is a quick bread, so just like making muffins you just want to combine the ingredients, not beat them. If you stir too much the bread won't raise as well in the oven and well be very dense. Not at all what you want.










When it's all combined, you will want to spray a loaf pan with non-stick cooking spray.
Pour the mixture into the pan and bake at 350 degrees for 60-70 minutes, or until a thin knife inserted near the center comes out clean. Remove from the pan and let it cool completely (YEAH RIGHT!)



Golden brown and delicious.




I think this would be devine lightly toasted tomorrow morning for breakfast, maybe with a little raspberry jam, or even lemon curd (YUM).  Or do what I just did and mix a little jam with a little butter and smear it on there, I should have taken a picture of that.

I love this because it's an easy to make bread with ordinary ingredients that you can be proud to serve to anyone.

  1. My mouth is watering looking at your pictures. Our son would probably love this recipe since he likes coconut a lot.
    He just finished his freshman year in college. This would be good to bake and send back with him when he comes home on a weekend to visit.
