Mini Fruit Crisps

Crisps and pies are always good, but mini ones are even better. I made these for Sunday night dessert for my family and they were so good and simple. Of course, you can make anything in these mini pie plates, but crisps make an especially nice and easy way to get a sweet in the oven.

The set of pans I have are not so easily found anymore, but I did find this Libbey Glass Just Baking Mini Pie Plate Set, 10-piece that are essentially the same, just a bit smaller. These mini desserts are nice because you can share them with someone you love, or have one all to yourself- either way!

My method was simple: open a can of pie filling and scoop some into the pans. Next I mixed up my standard crisp topping and loaded those babies up! I popped them into the oven while we ate dinner and by the time we were ready for dessert, our cute little sweeties were crisp and bubbly.

Mini Fruit Crisps

  • Enough pie filling to fill desired number of mini pie pans, canned or homemade is fine!
  • 1/2 cup cold butter
  • 2/3 cup flour
  • 2/3 cup old fashioned oats
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
Preheat oven to 350 degrees. In a bowl, combine the flour, oats, sugar and cinnamon. Cut in the cold butter until it is well combined, with some larger lumps still left. Open pie filling and scoop desired amount into pie plates; top with crisp topping. Bake for 20-25 minutes, or until the topping is golden brown and the filling is bubbly.

Here's a special little tip for you: if you like to have nice big clumps of crisp topping, squeeze the topping in your hand before putting it on top of the crisp. This makes it clump together and you will end up with big, lovely lumps of crispy goodness. Now that is a delicious description, if I do say so myself :)
