I don't know about you all, but I gladly welcomed a warm, boozy treat last night watching the Presidential election results come in. I was very happy to have made these a little earlier in the day. They came in handy!
The oatmeal part of the cookie is really nothing all that special, it's taken off the back of a generic oatmeal carton. What makes these cookies so special is the raisins. Oh, the raisins.
I let them soak in a mixture of Irish whiskey, orange juice and vanilla overnight. The raisins plumped up and became juicy~ soaking up all of the whiskey/orange juice/vanilla goodness. Adding them to oatmeal cookies and adding chocolate chips a spectacular match.
If you don't have any whiskey, I have made these by substituting rum with great success.
Oatmeal and Drunken Raisin Chocolate Chip Cookies
1 cup of butter
1 3/4 cup brown sugar
2 eggs
1 teaspoon vanilla
1 1/2 cups flour
1 teaspoon baking soda
1 teaspoon salt
3 cups rolled oats
1 1/2 cups flour
1 1/4 cups raisins
1/4 cup whiskey
1/4 cup orange juice
1 vanilla bean, split and seeds scraped out
1 cup chocolate chips
In a small bowl, combine the whiskey, orange juice and vanilla bean. Stir to combine; add raisins Let soak at least 1 hour or overnight. In a large bowl, cream the butter and sugar together. Add the eggs and vanilla, stir well. Mix in the flour, baking soda and salt. Stir in the drained raisins and chocolate chips. Bake in a 350 degree oven for 10-12 minutes, or until the edges are golden brown and the middles are set. Transfer to a wire rack and let cool.
