5 Ingredient Granola Bars



I'm always looking for a granola bar recipe that works consistently. I have some recipes that I like, a lot actually, but the results are somewhat hit and miss. You can make them exactly the same two or three times and they will only turn out 50% of the time. It's frustrating, it wastes money and it wastes time.

I saw the recipe for these Peanut Butter Granola Bars on The Marathon Mom a couple days ago. Since today is going to be my baking day, I decided to try them out while I was waiting on other things to get done.

The recipe is simple and only has 5 ingredients, unless you add the optional wheat germ then it has 6, and they were all things I had in my kitchen already. How nice is that?

Peanut Butter Granola Bars

1/2 cup peanut butter
1/3 cup honey
1/4 cup coconut oil (if you don't have coconut oil, Crisco works just as well)
1 1/2 cups old fashioned oats
2 Tablespoons wheat germ (optional, but nutritious)
1/2 cup peanuts

In a saucepan over low heat, melt the peanut butter, honey and oil. Mix in oats, wheat germ and peanuts. Spread into a greased or foil lined 8x8 inch pan. Let sit on the counter or in the freezer until cooled. Turn out onto the counter or cutting board and cut into bars. Makes about 1 dozen.



I couldn't be happier with these. She also has a Chocolate Granola Bar that I plan on trying soon. I wrapped these in parchment and stored them in the fridge.....they aren't going to last very long around here, but they are so easy to make that I don't mind at all.

I think I'll make a double batch of each flavor next time and have a whole bunch of handy snacks ready to go!
