These muffins are the result of my tireless search for a muffin that tastes like a Costco muffin, without the expense or calories. Those muffins aren't exactly the "ones" but they are close. Really close.
Muffin.
Mix the wet into the dry and get a batter that looks like this:
Make some crumb topping, I like to use the same one I make for fruit crisps.
Fill the muffin tins 2/3 of the way up and put a liberal amount of topping on.
Bake for 15-20 minutes and place on a cooling rack. I mixed up a little maple glaze and spooned some on while they were still warm.
These would be a pretty good way to start your day.
Recipe:
4 cups flour
3/4 cup white sugar
3/4 cup packed brown sugar
6 teaspoons baking powder
2 eggs
1 teaspoon salt
3/4 cup applesauce
1 1/2 cups milk
2 teaspoons cinnamon
2 teaspoons vanilla
Mix flour, sugars, salt, baking powder and cinnamon in a large bowl. Add milk, applesauce, eggs and vanilla and stir well to combine. Scoop into greased muffin tins and bake for 15-20 minutes in a 400 degree oven.
Optional topping:
1/2 cup cold butter
2/3 cup flour
1/2 cup brown sugar
2/3 cup oats
1 teaspoon cinnamon.
Mix everything together with a pastry blender, two forks or your fingers until crumbly, sprinkle liberally onto muffins before making.
Glaze:
1 cup powdered sugar
1 teaspoon vanilla
1 teaspoon cinnamon
1/4 pancake syrup or maple syrup
splash of milk
Mix first 4 ingredients together, add in milk a little at a time until drizzling consistency. Spoon onto muffins while still slightly warm.
I thought Kevin doesn't like maple? This reminds me of the heath bar cake mom makes because of the crunchy topping.
