Cherry Cheesecake Shortcake #LoveableLuckyLeaf


When I got my amazing gift pack from Lucky Leaf this time around, I knew I would be transforming my two most favorite desserts in the whole world  into one, simple recipe that I could serve my family for Valentine's Day. Hence, the Cherry Cheesecake Shortcake was born.

It's simple really, a sweet, crisp, light shortcake is topped with no-bake cheesecake filling and a healthy dollop of Lucky Leaf Premium Cherry Pie Filling is the crowning glory. The cheesecake filling is decadent on it's own, but with the addition of the cherry and the shortcake, it's transformed into something special.



Did I mention this is the perfect recipe to let kids help out with? Because it is! There are so many measuring, scooping, dumping, filling and other simple tasks going on that the kids will be able to help make a special dessert for the whole family.
Cherry Cheesecake Shortcakes

Shortcake:

  • 2 cups unbleached flour
  • 1/2 cup cold butter, cut into small pieces
  • 1 Tablespoon baking powder
  • 3 Tablespoons sugar
  • 1/2 teaspoon salt
  • 3/4 cup milk
Preheat oven to 450 degrees. In a bowl, combine the flour, baking powder, sugar and salt. Cut in the butter until the flour looks like course meal. Stir in enough milk to make a firm, but not sticky, dough. Gently turn out onto a floured counter and knead 2-3 times to make a smooth dough. Roll out 1/2 inch thick and cut out with a biscuit cutter. Place on a cookie sheet and bake 12-15 minutes, or until golden brown. You may wish to brush the tops of the biscuits with milk and sprinkle with sugar before baking. Makes 12 biscuits. 

No Bake Cheesecake Filling:
  • 8 oz cream cheese, softened
  • 1 pint whipping cream
  • 2 teaspoons vanilla, divided
  • 3/4 cup powdered sugar, divided
In a bowl, whip the cream cheese, 1 teaspoon vanilla and 1/4 cup powdered sugar until fluffy, set aside. In another bowl, pour in the pint of whipping cream, 1 teaspoon vanilla and 1/2 cup sugar. Whip until stiff peaks form, being careful not to over-mix (you'll make butter!). Gently fold the whipping cream into the cream cheese, using as few strokes as possible to mix. Refrigerate until ready to use. 

Cherry Filling:
  • Open one can of Lucky Leaf Premium Cherry Pie Filling (or other flavor of your choice, like strawberry, blueberry or raspberry)
To assemble:

Cut a shortcake in half. Place the bottom half on a plate, scoop some of the cheesecake filling onto the biscuit bottom and top with some cherry pie filling. Replace the top of the shortcake and serve.
