Raspberry Cheesecake Baked Oatmeal



Baked oatmeal is my fast-food answer to breakfast a lot of mornings. I can make a big pan full and feed my whole family, while still having leftovers to divide up for the freezer, or to eat another morning later in the week. This is a basic baked oatmeal that I have added to to make it a little more exciting.

The oatmeal itself is very easy to mix up and takes only 30 minutes to bake. Did I mention that it's a fairly healthy recipe as well? Using old-fashioned oats, coconut oil and milk makes this a breakfast that will stick with you all through the morning while the raspberry cheesecake topping makes it a little on the special side. The ingredients are easy to change up to suit your tastes and you can add in dried fruit, nuts, spices or other flavorings as they strike your fancy.



It's a win-win as far as breakfast goes. And it's pretty to look at- since we eat with our eyes first, that's a definite plus!



Raspberry Cheesecake Oatmeal
(adapted slightly from Sweet Basil 'N Spice)

  • 2 cups milk
  • 2/3 cup melted coconut oil or melted butter
  • 1/2 cup honey 
  • 1 teaspoon vanilla
  • 2 cups old-fashioned oats
  • 1 teaspoon salt
  • 1 (8 oz) block cream cheese, softened
  • 1 tablespoon honey
  • 1/2 teaspoon vanilla
  • 1 can raspberry pie filling OR Jam, Jelly or Real Fruit Spread of your flavor of choice
In a bowl, mix together the milk, coconut oil, honey, vanilla, oats and salt. Pour into a greased 9 x 13 inch baking dish. In a small bowl, mix together the cream cheese, honey and vanilla; stir until smooth. Scoop the cream cheese mixture into a quart sized plastic bag and set aside. Scoop the pie filling to a quart sized plastic bag and snip off one corner. Make stripes across the top of the oatmeal, using all of the filling, leaving gaps in between for the cheesecake filling. Repeat with the cream cheese mixture. Bake at 350 degrees for 30 minutes; let sit 5 minutes before cutting. 


Make this recipe fit your personal tastes and preferences by changing up or adding ingredients. Remember, this is a basic recipe that I added topping to, you can add whatever you like or leave out what you don't. The best recipes are the ones that give you a place to start and let you make it your own. Now, go make some baked oatmeal and make your tummy happy :)
