Foil Pouch Upside Down Cake


Who doesn't love dessert in the summer? Sure, there are various no-bake desserts you can treat yourself to, but sometimes you want something different and that is where this dessert comes in. It's a deconstructed upside down cake that you can make easily on your BBQ or over the campfire- and it uses only 4 simple ingredients.

I chose to make pineapple upside down cake this time, but any soft, juicy fruit could be used. We made these while camping, it was so easy to just pop them onto the fire while we ate our dinner! A scoop of ice cream or a dollop of whipped cream would be really nice, but alas the wilderness wasn't going to allow for it for us this time.

Foil Pouch Pineapple Upside Down Cake
For each pouch you will need:

  • 1 tablespoon butter
  • 2 tablespoons brown sugar
  • 2-3 tablespoons fruit 
  • 1/2 cup cubed pound cake
In a double thickness of foil (fold foil in half, place ingredients in the middle, then seal), place 1/2 of the butter, 1/2 of the brown sugar, the fruit and the pound cake cubes. Top with the remaining butter and brown sugar and seal well. Cook over a BBQ or campfire until hot all the way through and slightly browned, if desired.

These work out really well for camping because you don't need to dirty any dishes and can just toss out the tin foil when you are done eating. These were such a hit and my family was so surprised when I set them on the table. Even camping deserves a treat other than s'mores, no? I think so!
