Cinnamon rolls are great, and I love them, but it's summer and a cinnamon roll didn't sound quite right to me. So, I came up with these Sunshine Rolls as an alternative. I used the 1-Hour Cinnamon Roll recipe that's floating around Pinterest and changed them up a little, mostly in the icing.
The dough is very simple to mix, and I just halved the recipe for today to make 12 really LARGE cinnamon rolls. It's the icing, oh the icing, that makes these so wonderful. It's lemon flavored, with a little butter and cream cheese to help things along. Applying the icing to the warm rolls allows it to melt down into all of the crack and crevices, hiding in all the nooks and crannies. Yummmmmm.
You all know how much I love Lucky Leaf by now, and when I got my package from them this time and saw the lemon filling I KNEW these would be a perfect fit.
1 Hour Cinnamon Rolls
**I halved this recipe and made it in my bread machine. You can also make it in your stand mixer, as well. However you want is just fine!**
3 1/2 c. warm water
3/4 c. sugar
1/2 c. oil
6 T. yeast (4 1/2 Saf-Instant)
1 T. salt
3 eggs
10 1/2 c. flour
Since I halved this, I just put the ingredients into my bread machine and let it mix for me. You don't need it to run the entire Dough setting, so just watch the dough and when it gets completely mixed and is starting to knead, begin to time it for 10 minutes. Unplug or turn the bread machine off and set a timer for 10 more minutes. When the time is up, pat the dough out on a floured counter into a rectangle shape. Brush on melted butter, sprinkle with cinnamon and sugar or brown sugar. Roll up, jelly roll style, and cut into 12 even pieces. Place on a greased cookie sheet and let raise about 45 minutes, until not quite doubled. Bake in a 400 degree oven about 12-14 minutes, or until golden brown. Remove from the oven, let sit 5 minutes and then frost with Sunshine Roll Icing (recipe follows)
Sunshine Roll Icing
1/2 cup lemon pie filling
1/2 of an 8 oz brick of cream cheese
1 teaspoon vanilla (or lemon) extract
3 cups (maybe a little more) powdered sugar
Mix everything together in a large bowl until smooth. Use to ice cinnamon rolls.
