Oatmeal Pie




This was one of those recipes that I just wasn't sure about. It had every chance to be good, and I thought it might be, but I just didn't know. So I made it, and it looked delicious.
Delicious. I really need to get out my thesaurus and get another descriptive word. Scrumptious maybe.
Anyway, I made it and I didn't take pictures because I was in a hurry and I also didn't want to waste time posing the food in an appropriately lighted area if it was going to turn out, well, not so good.

But, guess what? It was wonderful. The family loved it. It tasted like pecan pie. It was gone in about an hour. It's really similar to a pecan pie, but with a KICK! and the looks you get when you tell people it's an oatmeal pie are hilarious. Just wait until they've eaten their slice first, or else they may not want to try it. Oatmeal in a pie? That's so weird! And so delicious.....


 

I regret not taking pictures now. I won't make that mistake again! This is a great pie to add to your collection! It takes really simple, humble ingredients and makes them into something very special. No one would even guess there was oatmeal in this pie unless you tell them. I think this is a fantastic pie and I think you will too. 

Thanksgiving is only 29 days away and it really is time to be thinking about what you plan to make. Add this pie to your menu and impress everyone with your mad pie making skills :)

Oatmeal Pie
recipe from Chickens in the Road 
  • 3 eggs
  • 3/4 cup light corn syrup
  • 1/4 cup dark rum (light will also work)
  • 2/3 cup sugar
  • 1/3 cup butter, melted
  • 1 teaspoon vanilla
  • 1/2 cup shredded coconut
  • 1/3 cup oatmeal
  • 1/3 cup walnuts, pecans, hazelnuts or macadamia nuts, chopped
  • unbaked pie shell
Mix together the eggs, corn syrup, rum, sugar, butter and vanilla. Stir in the coconut, oatmeal, and nuts. Pour into the unbaked pie shell and bake at 350 degrees for 40-45 minutes.

 If you aren't a fan of run, leave it out. It will change the flavor of the pie, but it will still be delicious. I've made it both ways and we've enjoyed it equally as much either way.
